Gluten Free Mediterranean Buddha Bowl (Serves 2)

Try this delicious easy recipe

Ingredients

  • ¼ cup uncooked quinoa
  • ½ cucumber, diced
  • ¼ red onion, diced
  • ½ capsicum, diced
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • 1 tbsp chopped coriander
  • ½ cup mixed salad beans
  • ½ cup olives
  • 2 cups spinach
  • 2 tbsp hummus
  • ½ avocado

Method

  1. Rinse quinoa thoroughly.  Cook in ½ cup water – bring to the boil then turn down the heat and let it simmer for about 15 minutes.  Once cooked, turn off the heat and let it sit for 5 minutes before fluffing with a fork.
  2. Whilst the quinoa is cooking, add cucumber, red onion, capsicum, dash of olive oil, juice of ½ lemon and coriander to a large bowl. Mix together.
  3. Get two serving bowls.  Build your bowls by adding half the cooked quinoa, half the cucumber, onion and capsicum mix, half the olives, half the salad beans and half the spinach to each bowl.
  4. Top with avocado and hummus and serve.
